Why this is yours, not ours

Architecture, not certification.

This isn’t certification. You won’t be handed a script to repeat. You’ll be handed the architecture — and the point is for you to make it yours: your kitchen, your judgment, your way of running it. That’s what we’re actually training toward.

Every tier builds Your Operating Plan — one block per unit. Capstone review is Standard and Guided only.

Curriculum

Six units. Leadership framing.

  1. Map the levers Week-one measurement action — see what actually moves food cost in your kitchen.
  2. Install The Five Weekly station OS so cost control is cadence, not an autopsy.
  3. Own purchasing Dock matches P&L — specs, receiving, and ownership at the back door.
  4. Find the drains The Eight Drains — locate where value leaves before the controller asks.
  5. Defend the number One-page story to GM / controller you can stand behind.
  6. Delegate + close Delegation, period close, and prep / banquet as included operating depth.

Commitment

What you commit to

  • Finish the modules on the agreed timeline
  • Run the weekly blocks in the real kitchen, not only on paper
  • Report progress to the sponsor in one short update every two weeks
  • Tie each improvement to a kitchen result the business can see

Same curriculum on every tier. Everyone builds Your Operating Plan — a one-page plan, one block per unit. Self-Study ends there. Capstone is Standard and Guided only: written analysis of two closed periods, scored by your sponsor against their written goals. Guided adds Lockard review.
